The first release of this fragrant and fruity cider.
A blend of 70% Pear;
Packham - Beurre Bosc
And 30% apple;
Gala - Golden Delicious - Sundowner
The fruit was crushed in small batches and each batch left to macerate for 1-7 days before pressing.
It was allowed to ferment dry naturally in old French oak barrels and mature until mid Winter.
After barrel maturation it was then sweetened with a little late harvested apple juice, bottled and left to ferment in bottle to gain texture and fizz.
