Allowed to ripen fully on the tree, the fruit for the HiFi was crushed as the harvest
unfolded on the farm, macerated with pulp and skins from a couple of days through
to a week depending on the variety to develop flavour and texture, batch pressed in
a traditional cider ‘packing press’ and allowed to ferment dry with natural yeasts.
